‘Secca’ meaning ‘dry’, this ricotta is aged slightly longer than standard ricotta.
This makes it an excellent grating cheese over pastas and salads. It also crumbles well, with a texture similar to feta.
FYI: It’s texture means that it’s not ideal for sauces and stuffing pasta shells like young ricotta…
